Raw Raspberry Cheesecake
- 8 pitted medjool dates, chopped
- ¼ cup desiccated coconut
- ½ cup almond meal
- 2 tbsp almond or peanut butter
- 1 cup cashews (soaked for 2-3 hours in water or overnight)
- 1 cup macadamias (soaked for 2-3 hours in water or overnight)
- 2 tbsp lemon juice
- 1 cup frozen raspberries
- 3 tbsp coconut oil, melted
- ½ cup pure maple syrup
- 1/3 cup reduced fat milk
- 40g (2 scoops) Bodiology Powder Original or Vanilla (substitute with your choice of vanilla protein powder)
- 2 tbsp water
- Fresh Raspberries

1. Grease and line a 20cm round spring form tin with baking paper.
2. To make the base, add all base ingredients into a food processor and blitz until mixture resembles bread crumb consistency. With damp hands, press the mixture into an even layer onto the base of the prepared tin. Place into the freezer for 15 minutes.
3. Meanwhile, to make the filling, drain the nuts and add all ingredients into processor and blitz until very smooth.
4. Remove the tin from the freezer and pour in the filling on top of the prepared base. Smooth the top with a spatula and return to the freezer and freeze for 4 hours.
5. To serve, remove from the freezer and allow to come to room temperature. Carefully remove cake from tin and top with raspberries and coconut.
