There is nothing better than tucking into a good muffin with a cup of tea. In fact in Sweden this art of taking a break to enjoy a tea and a treat is known as fika – and the benefits for the mind and soul are well documented. So consider this a healthy way to take a little ‘me’ time.
200g sweet potato (peeled and cut into small dices)
1 large ripe pear (diced and peeled) + 1 extra pear (leave peel on)for topping
1 cup almond butter
1 tsp cinnamon
1/4 tsp ginger powder
Pinch sea salt
3 organic eggs
3 tbsp honey or maple syrup
1/4 cup buckwheat or almond flour
2 tsp bicarb soda
1/3 cup roughly chopped walnuts
- Preheat oven to 180°C.
- Steam sweet potato and pear until soft.
- Allow to cool and then blend in your food processor with remaining ingredients (except walnuts). Gently fold walnuts through mixture.
- Pour into muffin cases and then top with slices of pear. Bake for around 40 minutes or until a skewer comes out cleanly from the centre.
